Growing up we do not appreciate our mothers enough for keeping us fed all the time. The biggest adjustment for me when moving out was having to meal plan and grocery shopping. Coming up with what to eat 7 days a week (and not having the money to eat out always) can be really difficult! Sometimes dinners get really repetitive and I’m always looking for a new recipe to try that’s not going to take me an hour to prepare. I also have a very picky eater as my significant other which can always make cooking more difficult. So here’s 5 of my go to week night recipes! Also, I’ve been trying to share more of the dinner’s I’m making on instagram stories. So go follow over there if you want to see that!

Liz Adam’s Meatballs

I loveeee these! Adam does too, even though they have spinach in them. I honestly think the pesto is like the secret ingredient that makes them so good. I serve them with marinara sauce and a side of salad or baked zucchini fries.

Oven Baked Chicken

Y’all this chicken is so easy and the best! The thing about baking chicken is to try and keep it moist. The key to doing that is to bake it at a high temperature for a shorter amount of time. I usually do 400 degrees for 20-30 minutes depending on how thick the breasts are. You can follow this recipe for spices but really any sort of marinade, or spices thrown on and cooked like this will work!

I have a mix of ways of serving this. Sometimes with rice and a veggie, other times with cubed potatoes in the oven. You can totally mix and match your sides!

Lemon Garlic Spaghetti

The recipe I’m linking here isn’t actually one I use. I mostly just throw stuff together. If y’all are interested I could do a whole separate recipe post with mine. I usually just cook some pasta in one post, then in another make the sauce out of lemon juice, olive oil, butter, and minced garlic. Sometimes I’ll steam zucchini and squash with the sauce too. The quickest dinner ever!

White Bean Soup

This recipe is actually new to me! I made it last week and Adam loved it! It was a little spicey for me but still delicious. We decided it would be really good to add some sausage or a meat in there as well to hearty it up a bit too.

    My husband and I were sitting and discussing which meals to make right now. We’re trying to keep things simple and save money and not go to the grocery store so often with all this craziness. We’ll have to consider adding a few of these ideas!
